- 4 oz cream cheese (softened)
- 1 large egg
- 3 cloves garlic (minced)
- 10 oz frozen chopped spinach (thawed with extra liquid removed)
- 4 oz feta cheese
Pastry and Topping
- 1 (17.3 oz) package frozen puff pastry (thawed)
- 1 large egg (for egg wash)
- 1 tablespoon water or milk (for egg wash)
- Cooking spray (to grease the muffin tin)
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) and spray a muffin tin with cooking spray to prevent sticking. Set aside.
- Prepare Filling: In a large bowl, beat together the softened cream cheese, 1 egg, and minced garlic with a hand mixer until the mixture is smooth. Stir in the thawed and well-drained spinach and crumbled feta cheese until fully combined. Set aside.
- Cut Puff Pastry: Slightly roll out the thawed puff pastry sheets into approximately 10 or 11 inch squares. Cut each sheet into 9 smaller squares as evenly as possible to fit into the muffin tin cups.
- Assemble Puffs: Place each puff pastry square into the muffin tin cups, gently pressing them down to form a cup shape. Spoon about 2 tablespoons of the spinach filling into each pastry cup. Fold the edges of the puff pastry squares toward the center over the filling.
- Apply Egg Wash: Whisk the remaining egg with 1 tablespoon of water or milk to create an egg wash. Brush this egg wash generously over the tops and edges of the puff pastry to help them bake to a shiny, golden brown.
- Bake: Bake in the preheated oven for 22 to 25 minutes or until the puff pastry is puffed up and golden brown on top.
- Rest and Serve: Remove the puffs from the oven and allow them to rest for 5 minutes. Carefully remove from the muffin tin, serve warm, and enjoy!
Notes
- Make sure to thoroughly drain the thawed spinach to avoid soggy puffs.
- If puff pastry is not thawed, allow it to thaw overnight in the refrigerator or at room temperature for about 30-40 minutes before using.
- Feel free to substitute feta cheese with goat cheese or ricotta for a different flavor.
- Leftover spinach puffs can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
