Instructions

Next, add the spinach—if fresh, cook until wilted; if using frozen, cook until most moisture evaporates. Remove from heat and let the mixture cool slightly.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, and ½ cup of olive oil until the mixture is smooth and well combined.
  4. Add Dry Ingredients: To the wet mixture, stir in the all-purpose flour, baking powder, salt, ground black pepper, and dried oregano or dill. Mix thoroughly until you achieve a thick but pourable batter.
  5. Combine Spinach Mixture and Cheese: Fold the cooled spinach, onion, and garlic mixture into the batter along with the crumbled feta cheese. If desired, add the grated mozzarella or Parmesan now for an extra cheesy flavor.
