Sriracha Glazed Roast Potatoes are crispy roasted white potatoes tossed in a sweet and spicy glaze made from soy sauce, maple syrup, and sriracha. - 800g / 28.2oz white potatoes (peeled, large ones quartered, smaller ones halved)
- Salt, to taste
- Vegetable oil, for roasting
Sauce & Garnish
- 2 tbsp soy sauce (or tamari for gluten-free)
- 3 tbsp maple syrup
- 1.5 tbsp sriracha
- 3 garlic cloves, peeled and finely chopped
- 1 tsp sesame oil
- Small handful of sesame seeds
- Small handful of fresh coriander, chopped
Instructions
- Prepare Potatoes: Peel the potatoes. Cut the large potatoes into quarters and halve the smaller ones to ensure even cooking.
- Parboil Potatoes: Place the potatoes in a large saucepan with cold water. Bring to a boil and cook for 7-9 minutes until the potatoes are soft on the outside but still hold their shape. Drain and let cool slightly for 10 minutes.
- Preheat Oven: Set your oven to 200°C fan (425°F) to prepare for roasting the potatoes to perfection.
- Roast Potatoes: Transfer the potatoes to a roasting tray. Sprinkle generously with salt and drizzle with vegetable oil. Toss to coat evenly. Roast in the oven for 45-55 minutes until the potatoes are golden and crispy, turning them halfway through for even browning.
- Prepare Glaze Sauce: While potatoes are roasting and nearing completion, mix soy sauce, maple syrup, sriracha, chopped garlic, and sesame oil in a small bowl.
- Cook Glaze Sauce: Pour the sauce mixture into a pan over medium heat and cook for 2-3 minutes, stirring occasionally until it thickens slightly.
- Glaze Potatoes: Add the roasted potatoes to the pan with the thickened sauce. Stir gently to coat all the potatoes evenly in the spicy-sweet glaze.
- Garnish and Serve: Sprinkle sesame seeds and freshly chopped coriander over the glazed roast potatoes. Serve hot as a flavorful side dish or snack.
Notes
- Using tamari instead of soy sauce makes this recipe gluten-free.
- Parboiling the potatoes before roasting helps achieve a crispy exterior and soft interior.
