Strawberry Syrup

  • 200g fresh strawberries
  • 90g water
  • 200g sugar

Brewed Green Tea

  • 500ml hot filtered water (around 70°C-80°C)
  • 5g sakura green tea or any good quality green tea

  • Ice cubes
  • Fresh strawberry slices

Instructions

  1. Prepare Strawberry Syrup: Wash the strawberries and cut them into small chunks or slices. In a small pot, combine sugar, water, and strawberries. Bring to a low simmer and allow to simmer for about 3-4 minutes. Turn off the heat and let it cool down.
  2. Steep the Syrup: Allow the syrup to steep for 2-3 hours at room temperature or preferably overnight in the fridge to extract maximum strawberry flavor.
  3. Strain the Syrup: Lightly smash the strawberries to release more flavor, then strain the mixture through a fine sieve to remove pulp and seeds. Transfer the syrup into a clean bottle or container. Store in the fridge up to 5 days, checking freshness before use.
  4. Brew Green Tea: Bring filtered water to a boil and allow it to cool to 70°C-80°C. Pour the hot water over the green tea leaves. Let the tea infuse for 10-15 minutes to obtain an intense but non-bitter flavor. Strain through a sieve and let it cool. Alternatively, use cold brew by steeping tea leaves in cold filtered water in the fridge for approximately 12 hours.
  5. Serve the Iced Tea: Fill glasses halfway with ice cubes. Add 40-50g of strawberry syrup and fresh strawberry slices to each glass. Top up with cooled green tea and serve immediately.
