Description

A festive and creamy cranberry whipped feta dip perfect for holiday gatherings, combining tangy feta, sweet and tart cranberry compote, and crunchy pistachios for a delightful appetizer.

Ingredients

Scale

Cranberry Compote

  • 2 cups frozen or fresh cranberries
  • 1/4 cup maple syrup
  • Zest and juice of one orange
  • 1/4 tsp ground nutmeg

Whipped Feta Dip

  • 225 g (8 oz) feta cheese, about 1 1/2 cups crumbled feta
  • 1/2 cup plain Greek yogurt
  • 1/4 tsp chili flakes
  • 2 tbsp olive oil

Toppings

  • 1/4 cup chopped pistachios
  • 12 tbsp honey for drizzling
  • Fresh thyme leaves (optional)

Instructions

  1. Make the cranberry compote: In a medium saucepan, combine cranberries, maple syrup, orange zest, orange juice, and ground nutmeg. Bring to a boil over medium-high heat.
  2. Simmer the cranberries: Reduce heat to medium-low and simmer for 6-10 minutes, stirring occasionally, until cranberries burst and the mixture thickens to a jam-like consistency. Remove from heat and let cool.
  3. Whip the feta dip: In a food processor or using an immersion blender, blend feta cheese, Greek yogurt, chili flakes, and olive oil on high until smooth and creamy.
  4. Assemble the dip: Spread the whipped feta evenly in a shallow bowl. Spoon the cooled cranberry compote over the top. Sprinkle with chopped pistachios, drizzle with honey, and garnish with fresh thyme leaves if desired.

Notes

  • Use fresh or frozen cranberries based on availability.
  • Adjust the amount of honey to suit your preferred level of sweetness.
  • Chili flakes add a subtle heat; omit or reduce for a milder dip.
  • Serve with crackers, sliced baguette, or vegetable sticks.
  • Can be made a few hours ahead and refrigerated; bring to room temperature before serving.
