Ingredients
Scale
Main Ingredients
- 12 oz silken tofu
- 6 oz white chocolate
- 1 tbsp matcha powder
- 1 tsp vanilla extract
Toppings
- Greek or coconut yogurt, for serving
- Fresh berries, for garnish
Instructions
- Blend Ingredients: Melt the white chocolate gently, then combine it with the silken tofu, matcha powder, and vanilla extract in a blender. Blend everything until you get a smooth, creamy mixture with no lumps.
- Pour Mixture: Transfer the blended mousse mixture into serving glasses or bowls evenly to prepare for chilling.
- Chill: Place the glasses in the refrigerator and chill for at least 1 hour. This will allow the mousse to set and develop a firmer texture.
- Add Toppings and Serve: Just before serving, add a dollop of Greek or coconut yogurt on top, and garnish with fresh berries to add a pop of color and a complementary tartness.
Notes
- Melt the white chocolate gently using a double boiler or microwave in short bursts to prevent burning.
- Use silken tofu for the creamiest texture; firm tofu will not work as well.
- Adjust matcha powder amount for desired intensity—start with 1 tbsp and add more if you prefer a stronger green tea flavor.
- This mousse is best served chilled and consumed within 2 days for optimal freshness.
- You can substitute fresh berries with chopped nuts or a drizzle of honey for different toppings.
