Instructions
- Prepare the vegetables: Finely chop the tomatoes and place them in a large mixing bowl. Then chop the white onion, green bell pepper, and red bell pepper into very small pieces and add them to the tomatoes.
- Add garlic and parsley: Mince the garlic cloves finely and chop the fresh parsley. Stir both into the bowl with the chopped vegetables until evenly mixed.
- Season the salad: Add the tomato paste, extra virgin olive oil, freshly squeezed lemon juice, kosher salt, black pepper, Aleppo pepper, and sumac to the vegetable mixture. Combine thoroughly, ensuring the tomato paste is well incorporated and the spices are evenly distributed.
- Chill and serve: Refrigerate the ezme salad for at least 30 minutes to allow the flavors to meld together. Serve cold as a mezze appetizer, a sauce alongside grilled dishes, or as a refreshing salad.
