  • 1 teaspoon sesame oil
  • 1 large garlic clove, grated

Instructions

  1. Prepare the sauce base: In a large 12 x 8 inch (30 x 20 cm) baking dish, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk thoroughly until smooth with no lumps of curry paste. Grate in the garlic and ginger, mixing again. Optionally, add ¼ cup of water if you prefer a brothier consistency when serving with rice or noodles.
  2. Add vegetables: Preheat your oven to 400℉ (200℃). Chop the bok choy and slice the zucchini (or chosen vegetables), then add them to the baking dish. Stir gently to ensure the vegetables are evenly coated in the curry broth.
  3. Arrange dumplings: Place the frozen dumplings on top of the vegetables in the baking dish so they are not overlapping. Press them lightly into the broth so the bottom is submerged but the top remains visible. Spoon some of the broth over the dumplings for flavor and moisture. Cover the dish tightly with aluminum foil.
  4. Bake the dumplings: Bake covered for 20 minutes in the preheated oven to cook through the dumplings and vegetables. Then remove the foil and continue baking for an additional 5-10 minutes until the broth bubbles vigorously and the tops of the dumplings develop a slight crisp.
