Roasted Vegetables

Instructions
- Whip Feta: In a food processor, crumble feta cheese and combine with cream cheese, olive oil, lemon juice, minced garlic, and a pinch of sea salt. Process until the mixture is smooth and creamy, scraping down the sides once during mixing. Taste and adjust salt if needed, adding more olive oil to achieve a smooth texture. This can be prepared up to 3 days in advance and stored in the refrigerator.
- Prepare Vegetables: Cut all vegetables so they are roughly the same size to ensure even cooking.
- Preheat Oven and Arrange Vegetables: Preheat the oven to 425°F (220°C) and coat a large baking sheet with nonstick cooking spray.
