  • Author: Lana
  • Total Time: 40 minutes
  • Yield: 24 cookies 1x

Description

Delicious brown sugar roasted raspberry cookies featuring gooey white chocolate centers and juicy caramelized raspberries, perfect for a sweet treat with a delightful balance of flavors and textures.

Ingredients

Scale

For the Roasted Raspberries

  • 250 g Raspberries (fresh or frozen)
  • 12 tbsp Honey
  • Pinch of Salt

For the Cookie Dough

  • 226 g Unsalted Butter (at room temperature)
  • 330 g Brown Sugar
  • 1 whole Egg
  • 1 Egg Yolk
  • 1 tsp Vanilla Extract
  • 320 g All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/8 tsp Cinnamon
  • 120 g White Chocolate Chips (or dark chocolate)

Instructions

  1. Roast the Raspberries: Preheat your oven to 400°F (204°C). Spread the raspberries evenly over a parchment-lined baking sheet, drizzle with honey, and lightly sprinkle with salt. Roast for 10-15 minutes until caramelized and fragrant. Let cool completely.
  2. Prepare the Cookie Dough: Reduce oven temperature to 350°F (175°C). In a mixing bowl, beat room temperature butter and brown sugar until light and fluffy to create a creamy base. Mix in the whole egg, egg yolk, and vanilla extract until fully combined.
  3. Add Dry Ingredients: Gradually add in the all-purpose flour, baking soda, baking powder, salt, and cinnamon. Mix gently until just combined to keep the cookies tender. Fold in the white chocolate chips evenly.
  4. Incorporate Roasted Raspberries: Carefully fold the cooled roasted raspberries into the dough, ensuring they are evenly distributed without overmixing to maintain juicy pockets.
  5. Shape the Cookies: Scoop 1.5 oz portions of dough onto a parchment-lined baking sheet, spacing them to allow for spreading. Freeze any remaining dough for later use.
  6. Bake: Bake the cookies for 12-14 minutes or until the edges are golden brown and centers are set. For a finishing touch, sprinkle flaky sea salt on top immediately after removing from the oven.

Notes

  • Using fresh or frozen raspberries works well, but ensure they are drained if frozen to reduce excess moisture.
  • Freezing extra dough portions allows you to enjoy fresh cookies anytime.
  • Adjust baking time slightly if using dark chocolate chips for a richer taste.
  • Sprinkling flaky sea salt enhances the sweetness and adds a gourmet touch.
