  • Yield: 4 servings 1x

Description

This Savory Thai Coconut Lime Poached Cod is a vibrant and flavorful dish cooked in a fragrant coconut broth infused with lime, ginger, garlic, and a hint of sweetness. Poached gently in just 25 minutes, the cod fillets remain tender and flaky, perfectly complemented by fresh spinach and a garnish of cilantro. It’s an easy, healthy, and delicious meal inspired by traditional Thai flavors.

Ingredients

Scale

Poaching Broth

  • 1 can Coconut Milk (can substitute with light coconut milk)
  • 1 cup Chicken Broth (can substitute with vegetable broth)
  • 1 tbsp Fish Sauce (adjust for less saltiness if desired)
  • 3 tbsp Fresh Lime Juice (can replace with lemon juice)
  • 1 tbsp Grated Ginger (fresh preferred, powdered can be used)
  • 2 cloves Minced Garlic (garlic powder can substitute)
  • 2 pcs Sliced Chilies (optional for heat)
  • 1 tbsp Brown Sugar (honey or maple syrup can be alternatives)
  • 1 tbsp Lime Zest (can replace with lemon zest)

Main Ingredients

  • 4 fillets Cod Fillets (substitute with other firm white fish if desired)
  • 4 cups Fresh Spinach Leaves (kale or Swiss chard can be used)
  • 1/4 cup Fresh Cilantro (garnish, parsley can be substituted)

Instructions

  1. Prepare the flavorful broth: In a large skillet, combine the coconut milk, chicken broth, fish sauce, fresh lime juice, grated ginger, minced garlic, sliced chilies, brown sugar, and lime zest. Place the skillet over medium heat and bring the mixture to a gentle simmer, allowing the flavors to meld.
  2. Poach the cod fillets: Carefully add the cod fillets into the simmering broth, ensuring they’re submerged. Reduce the heat to low, cover the skillet with a lid, and allow the cod to poach gently for 8-10 minutes, or until the fish flakes easily with a fork, indicating it’s perfectly cooked.
  3. Add and wilt the spinach: During the last few minutes of cooking, stir the fresh spinach leaves into the broth. Let the spinach wilt naturally in the warm broth, absorbing some of the savory flavors.
  4. Plate and garnish: Gently transfer the poached cod fillets and wilted spinach to serving plates. Garnish with the fresh cilantro leaves and serve immediately, optionally with lime wedges on the side for an extra zesty kick.

Notes

  • For a spicier dish, increase the amount of sliced chilies or include Thai bird’s eye chilies for heat.
  • Substitute cod with other firm white fish like halibut, haddock, or sea bass if preferred.
  • Light coconut milk can be used to reduce the fat content while maintaining flavor.
  • Adjust fish sauce quantity to suit salt preference or substitute with soy sauce for a different flavor profile.
  • Serve with steamed jasmine rice or rice noodles to soak up the delicious broth.
  • For a vegetarian version, replace fish broth and fish sauce with vegetable broth and soy sauce or tamari.
