Instructions
- Make the mint simple syrup: In a small saucepan, combine 1 cup water, 1 cup granulated sugar, and 1 cup packed fresh mint leaves. Heat over medium-high heat and bring to a boil, stirring occasionally until sugar dissolves completely. Remove from heat and let steep for 30 minutes to infuse the syrup with mint flavor.
- Strain and cool the syrup: Strain the syrup through a fine-mesh sieve, pressing on the mint leaves to extract maximum flavor. Discard the leaves and let the syrup cool completely before use.
- Blend the watermelon mixture: In a blender, combine 4 cups cubed seeded watermelon, juice of 1 lime, ¼ cup fresh mint leaves, and ¼ cup of the mint simple syrup. Blend until completely smooth and vibrant in color.
- Shake the mocktail: Fill a cocktail shaker with ice cubes. Pour the blended watermelon mixture over the ice, then add ¼ cup non-alcoholic tequila. Shake vigorously for 15-20 seconds to chill and combine flavors thoroughly.
- Serve: Strain the shaken mocktail into glasses filled with fresh ice. Garnish with lime slices and extra mint leaves. Serve immediately for a refreshing drink.
