Ingredients
Scale
Crust
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar (divided, see filling for the rest)
- 1 tsp baking powder
- 1/2 cup unsalted butter, cold and cubed
Filling
- 2 cups fresh peaches, sliced
- 1 cup heavy cream
- 2 large eggs
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
- Make the crust: In a mixing bowl, combine the flour, 1 cup granulated sugar, and baking powder. Cut in the cold, cubed butter using a pastry cutter or fingers until the mixture becomes crumbly. Press this mixture evenly into the bottom of the prepared pan to create the crust.
- Bake crust: Bake the crust in the preheated oven for approximately 10 minutes or until it is lightly golden. Remove from the oven and set aside.
- Prepare cream filling: While the crust bakes, whisk together the heavy cream, remaining 1/2 cup sugar, eggs, and vanilla extract in a separate bowl until smooth and well combined. Gently fold in half of the sliced peaches to incorporate them into the filling.
- Assemble bars: Pour the cream filling evenly over the pre-baked crust. Arrange the remaining peach slices on top for a beautiful presentation.
- Bake the bars: Return the assembled pan to the oven and bake for an additional 30-35 minutes. Bake until the cream filling is set and the top is golden brown.
- Cool and serve: Allow the peach and cream bars to cool completely in the pan before slicing into 16 servings. This helps the bars firm up for clean slices.
Notes
- Use ripe but firm peaches for best texture and flavor.
- Cold butter is crucial for a crumbly crust texture.
- Ensure the bars are completely cooled before slicing to maintain their shape.
- Can be stored covered in the refrigerator for up to 3 days.
- For extra flavor, sprinkle a little cinnamon over the peach slices before baking.
