Peaches and Cream Bars Recipe

  • Author: Lana
  • Total Time: 1 hour 5 minutes
  • Yield: 16 servings 1x

Description

These Peaches and Cream Bars are a delightful dessert featuring a tender buttery crust, a luscious cream filling, and juicy fresh peaches. Perfect for summer gatherings or a sweet treat, they combine the richness of heavy cream and eggs with the natural sweetness of peaches baked to golden perfection.

Ingredients

Scale

Crust

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar (divided, see filling for the rest)
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, cold and cubed

Filling

  • 2 cups fresh peaches, sliced
  • 1 cup heavy cream
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
  2. Make the crust: In a mixing bowl, combine the flour, 1 cup granulated sugar, and baking powder. Cut in the cold, cubed butter using a pastry cutter or fingers until the mixture becomes crumbly. Press this mixture evenly into the bottom of the prepared pan to create the crust.
  3. Bake crust: Bake the crust in the preheated oven for approximately 10 minutes or until it is lightly golden. Remove from the oven and set aside.
  4. Prepare cream filling: While the crust bakes, whisk together the heavy cream, remaining 1/2 cup sugar, eggs, and vanilla extract in a separate bowl until smooth and well combined. Gently fold in half of the sliced peaches to incorporate them into the filling.
  5. Assemble bars: Pour the cream filling evenly over the pre-baked crust. Arrange the remaining peach slices on top for a beautiful presentation.
  6. Bake the bars: Return the assembled pan to the oven and bake for an additional 30-35 minutes. Bake until the cream filling is set and the top is golden brown.
  7. Cool and serve: Allow the peach and cream bars to cool completely in the pan before slicing into 16 servings. This helps the bars firm up for clean slices.

Notes

  • Use ripe but firm peaches for best texture and flavor.
  • Cold butter is crucial for a crumbly crust texture.
  • Ensure the bars are completely cooled before slicing to maintain their shape.
  • Can be stored covered in the refrigerator for up to 3 days.
  • For extra flavor, sprinkle a little cinnamon over the peach slices before baking.
